It 's the first time I write five pages on my land. Telling the province of Parma was not easy because there are sacred cows, excellence that inspires fear. Usually start, I go around and write what struck me most, sampling, testing, following advice from chefs, butchers, the people I meet along my path. This time was different. But I tried to convey to the reader the same feeling of discovery I like to try that when I travel for work and passion. I'm not a pundits and do not want to climb into the chair. I leave this boring role in who is better than me. Move between Parmigiano-Reggiano, and Shoulder Cotta Culatello without being pedantic was a challenge.
